Steps
- season the chicken breasts with salt and pepper. coat roasting pan with olive oil, put the breasts in and put in oven for 40 minutes at 375 degrees F.
- follow instructions on yellow rice package. (should take about 20 minutes to cook.)
Chop celery and tomatoes.
- When chicken is done, let cool off, then shred.
Saute the celery in a large pan, then mix in yellow rice, tomatoes, shredded chicken, and oregano. For added flavor, can use left over juices from the roasting pan to mix in.
