Steps

  1. season the chicken breasts with salt and pepper. coat roasting pan with olive oil, put the breasts in and put in oven for 40 minutes at 375 degrees F.
  2. follow instructions on yellow rice package. (should take about 20 minutes to cook.) Chop celery and tomatoes.
  3. When chicken is done, let cool off, then shred. Saute the celery in a large pan, then mix in yellow rice, tomatoes, shredded chicken, and oregano. For added flavor, can use left over juices from the roasting pan to mix in.
